When selecting a freeze dryer for food processing, three core technical parameters deserve your close attention: shelf area, condenser temperature, and ultimate vacuum level.

For most food applications, a condenser temperature of approximately -45°C and an ultimate vacuum of 10 Pa are generally adequate to ensure efficient sublimation.

That said, shelf area is the most commonly misunderstood parameter. Some suppliers claim a batch capacity of 50 kg but offer only 4 m² of shelf area — a clear mismatch. In reality, such equipment cannot achieve the stated throughput, regardless of vacuum performance.

Why? Because freeze-drying efficiency depends not only on moisture content and vacuum level, but also on material loading thickness. Overloading the trays slows heat transfer and vapor escape, drastically reducing drying efficiency — even for low-moisture products like candy.
