Freeze drying looks simple, but beginners make two common, avoidable mistakes. Avoid them and your batches turn out right.

When beginners first start using a freeze dryer, two of the most common mistakes quickly surface: incomplete pre-freezing and judging the drying endpoint by time alone. Many first-time users are eager to see results and fail to realize that a freeze dryer only performs at its best when the product has been thoroughly frozen before the vacuum phase begins. In fact, these two mistakes alone account for most failed or substandard batches on a beginner's freeze dryer.

If the vacuum is pulled before the product is fully frozen, the consequences can be severe: the product may boil, suffer localized melting, or even undergo structural collapse, ruining the entire batch and wasting hours of freeze dryer runtime. To address this, Kemolo has designed its freeze dryer to prevent new users from starting the vacuum before the product is thoroughly frozen. The system presets the pre-freezing product temperature and uses multiple product temperature probes inserted directly into the product. Once the product temperature reaches -35°C, the freeze dryer automatically starts the vacuum, so the user does not need to manually start it — a built-in safeguard that eliminates the risk of premature vacuuming.

Different products have different moisture contents and therefore require different freeze-drying times, and this is exactly where many beginners go wrong with their freeze dryer. Different freeze dryers also perform differently, and even the same freeze dryer under different operating conditions may require different drying times for the same type and quantity of raw material. For this reason, the drying endpoint cannot be judged by time alone; it should be determined by combining time with product temperature and other information. As a general guideline, when the product temperature has stabilized and remained stable for 1–2 hours, the batch can be unloaded from the freeze dryer with confidence.
